Foodie: Eggy Avocado Toast
Jessie's Cookbook features delicious homemade recipes right from my kitchen. Today's tasty meal is a fun breakfast idea I like to call Toad's Avocado Toast. It's traditional toad in the hole with an avocado toast twist, along with my favorite whipped coffee recipe. This is a recipe for breakfast I really love.

Recipe for Toad's Avocado Toast
Serving Size: 1 to 2
Prep time: 10 minutes
Cooking time: 20 minutes
Ingredients:
- 2 slices of bread
- 2 eggs
- 1 Avocado
- 1 tablespoon of butter
- Seasonings to Taste (I recommend cracked pepper, sea salt, and red pepper flakes)
Directions:
Step 1: Cut circular holes in both slices with either a round glass or cookie cutter.
Step 2: Spread butter on both sides of each slice.
Step 3: In a medium sized pan, melt butter on medium heat and places slices in the pan.
Step 4: Add crack an egg in each bread hole and cook for a bout 2 to 3 minutes on each side or for your fried egg preference.
Step 5: Mash avocado and place on each completed toad in the hole.
Step 6: Add desired seasoning to Toad's Avocado Toast.
Recipe for Whipped Coffee
Serving Size: 1
Prep time: 5 minutes
Cooking time: 10 minutes
Ingredients:
- 2 tablespoons of Cafe Bustelo Instant Coffee
- 2 tablespoons of sugar or alternative sweetener to sweeten coffee
- 1 tablespoon of warm water
- 1 1/2 cups of desired milk
- 1 cup of ice
Directions:
Step 1: In a small mixing bowl add instant coffee and water and mix until whipped to a creamy consistency.
Step 2: In your favorite cup add ice and milk.
Step 3: Add whipped coffee on top of your cup. Stir altogether and add sugar to sweeten.
Once your coffee is done, you are ready to enjoy your breakfast. Bon appetit!
